Salt, pepper and flour the beef. Heat olive oil in a large pot and sauté meat until golden-yellow, remove. Sauté the dices onions, add diced carrots, celery and potatoes and herbs. Fry for another 4 minutes, then pour beer. Add tomatoes and bring to the boil. Stir and simmer for ca.2 hours until the meat is soft and the sauce thickens, season to taste with salt and pepper.
Either “plain” with potato purée or French fries and fresh market vegetables or as real English steak & Guinness pie topped with puff pastry and browned: Preheat oven at 200 ˚C. Put the meat into 6 heat-resistant forms, roll out the puff pastry. Cut out six circles, each 1 cm larger than the diameter of the forms. Coat the edge of the forms with whisked eggs, place the dough circles on the heat-resistant forms and press around the edge. Cut the surface of the dough slightly, coat with egg. In the preheated oven bake for about 45 minutes until golden-brown.
