Tasting
Bright straw yellow, animating, finely floral. Fragrant – a subtle composition: yellow peach, nutmeg, mandarin, fresh Muscat grapes, lemon candy, ethereal, inviting. Fruity prospects – a bouquet in the very sense of the word!
Dry, with the matching acidity, chiselled. Elegant finesse and silky texture, fine Muscat spiciness. White flowers and a subtle finish with a hint of elder blossoms, accompanied by some anise and fennel seeds, dry and animating. A connoisseur-Muscat from the silicate soils in Rust – year for year - distinguished by its slight touch of lemon. And this has been known here for centuries!
Pairing
Char tartare with yuzu mayo, salad of Penne and Rucola with roasted Macademia nuts. Stalk celery and fennel – marinated raw and steamed, cheese puffy pastry with lemon mayo, sprout salad with coriander, fried pizza with curd, cauliflower and capers, Roscoff-onion-tarte tatin with lamb´s lettuce and sheep milk cheese. Guinea fowl with lemon. As animating aperitif before listening to a private concert of Ostbahnkurti. Gives relieve during longer periods of heat. A wonderful companion to a fine herb-flavoured cuisine with stewed laurel tomatoes, terrines of goat milk cheese, light salads, fennel breadsticks. And to be honest: would you push such a nice Muscat-spritzer from the table? Harmonious fruity flatterer with an obsessive potential.
Making

Destemming, clearing of the must, cooled fermentation in stainless steel tanks at a temperature of 18 °C (64 °F) for 3 weeks.
