Tasting
Intensive purple with a violet rim, impressive viscosity. Multi-faceted aroma spectrum on the nose displaying black Cormons cherries plus a leaf of mint, almost ethereal dark fruitiness, varieties of pepper, candied blackberries, untamed yet revealing a powerful, tranquil depthness, cornelian cherries and kaokao, dry with generous prospects, mighty yet inviting tannins, finely grained, representing most clearly the luxurious ripeness characteristically for the vintage. Multi-layered, great substance accompanied by a nice spiciness. Persistent. Great cool wine from a hot vineyard – the paradoxon of the single vineyard Oberer Wald.
Pairing
Stewed leg of venison larded with juniper bacon, with well matured sirloin with pepper crust, with real Biltong – self-imported and hand-cut, truffled pigeon roulade, terrine of hare with blackberry jelly, as part of a „blood, sweat and tears“ tasting – in the finale, as patrimony if the outrageous subscription has been cancelled, or just to show off.
Making
Hand-picked into small boxes, a lot of chalk under loam from the upper and lower part of Oberer Wald, practically no selection necessary, beginning of October 2009 showing perfect parameters of ripeness.
Destemming, mash fermentation in closed stainless steel tanks at a temperature of more than 30 °C (88 °F) for 14 days, followed by 4 more days of maceration, gentle pressing and maturation in 300 l barrels (approximately 30% new).
