Tasting

We planted the first tempranillo vines in 1994! Postal delivery from Spain from selected Rioja wineries named by the Slow Food World Wine Guide. Since 2023 we are having access to a larger vineyard from a retired colleague in northern Burgenland. Large berries, large grapes, thick berry skins - magnificent! Distinctive leaves - distinctive fruit - perfect!

Strong purple colour with a dark cherry rim, beautiful viscosity, clear cherry flavour in the sense of ripe heart cherries, some of them also dipped in fine chocolate, impression of a red-blue bouquet of flowers, but also blackberries and cranberries distinguishable, pure and genuine fruit flavours, fine matchstick nuances. Dry, firmly structured, carried by a juicy acidity and finely defined tannin coating, clear fruit appearance with an elegant body, chocolate also makes its presence later on the palate, does completely without wood. A young guard at the start.

Pairing

Regina's visionary eye sees: Rump steak - rare with bacon and cabbage sprouts, venison pasta asciutta with homemade spaghettini, bean stew with chipotle and a generous amount of diced chorizo, smoked paprika sweet water fish soup, Emmental cheese aged for 24 months sliced from a large piece - served with toasted bread, braised leg of lamb with salt capers and black olives, confined duck with potatoes and duck grammels from the gourmet restaurant with various consistencies, savoury cherry strudel with Manchego and almonds, to wait for the Austrotapas.

Making

Harvested at the beginning of October 2023, beautiful, healthy grape material. 
Open fermentation in vats with regular punching down and appropriate maceration time, followed by light pressing, malolactic fermentation, storage in used 300 litre barrels for 8 months.
