Intensive purple, rather opaque, dense viscosity, multi-layered aroma compounds on the nose displaying noble characteristics. Graphite, loads of black berries, nice doses of noble chocolate, noble notes of cedar, ivy and roasted macadamia, very opulent and complex. Dry, compact tannin frame, powerful berry fruit, due to its intensive aromas nice to chew. Very long. An example that it works without technical concentration. Very dense with high ageing potential. Gains in complexity and animating with every sip. Thank you very much, dear selecting and harvesting team – and furthermore matured in most noble barrels!
Tartar of smoked bison, haunch of venison with elderberries, breast of wild duck with brandy sauce and fried pepper dumplings, venison salami. While sitting in comfortable fauteuils and listening to Wagner’s “The Ring of the Nibelung”, and on many other occasions (for example to enjoy in a bacchanal sense).
Harvested second week of October 2006 by hand into small boxes, mainly from the single vineyards KRAXNER (marl on schist subsoil) and Gillesberg (schist weathered soils).
Destemming, closed fermentation for 14 days at 30 ˚C followed by 5 days of maceration, gentle pressing, malolactic fermentation and maturing in small 300 l-oak barrels (50% new).
